Le Châtelet Muscadet Sèvre et Maine Sur Lie 2024
The lightest, crispest wine tonight — it awakens the palate.
Nose: Fresh lemon zest, green apple, white blossom and oyster-shell minerality.
Palate: Bone dry with vibrant acidity. Crisp citrus, pear and green apple, supported by a subtle creamy texture from lees ageing, finishing with distinctive saline minerality.
Cheese pairing
Crottin de Chavignol (young goat's cheese) is the classic Loire pairing. Also excellent with fresh goat's cheese or Brie de Meaux.
Tasting 2 of 4 · White · Languedoc, France
Élite d'Or Chardonnay–Roussanne, Domaine de la Baume 2023
Fuller-bodied and creamier, naturally following the Muscadet.
Nose: Ripe peach, apricot, pineapple, vanilla, toasted hazelnut and butter with floral notes from the Roussanne.
Palate: Rich and rounded with ripe orchard fruit balanced by fresh acidity. Creamy texture, subtle oak, hints of honey and toasted almonds.
Cheese pairing
Comté (18–24 months) complements the wine beautifully. Also excellent with Beaufort or aged Gruyère.

Domaine des Hauts de Sanziers Saumur 2024
A fresh, elegant red — a gentle introduction into the reds.
Nose: Fresh raspberry, cherry, blackcurrant, violet and subtle graphite with gentle herbal notes.
Palate: Juicy red fruits supported by lively acidity and fine silky tannins. Elegant, fresh and beautifully balanced with classic Loire Cabernet Franc character.
Cheese pairing
Morbier works exceptionally well, while Tomme de Savoie or Saint-Nectaire are equally good partners.

Sans de la Mothe du Barry Bordeaux Supérieur 2020
The most structured wine tonight — the ideal finale.
Nose: Blackcurrant, blackberry, plum, cedar, vanilla, tobacco and subtle cocoa.
Palate: Rich, structured and concentrated with ripe dark fruits, well-integrated oak, smooth tannins and balanced freshness. Layers of spice and liquorice develop with air.
Cheese pairing
Mature Comté (24 months) is an excellent match. Alternatively, aged Mimolette or Ossau-Iraty also pair beautifully.
