Description
Produced by the family-owned Domaine Pascal Boban, located in the hamlet of Rameau just outside Chablis, this wine is a classic expression of one of Burgundy's most renowned appellations. The vineyards sit on ancient Kimmeridgian limestone soils rich in fossilised oyster shells, giving the wine the distinctive minerality for which Chablis is famous. Unoaked and crafted to preserve freshness and purity, this is a beautifully precise Chardonnay that showcases both elegance and terroir.

Appearance
Brilliant pale yellow with delicate green reflections.
Nose
Fresh citrus fruits, lemon zest, green apple and white blossom, complemented by subtle saline and mineral notes.
Palate
Crisp, vibrant and beautifully focused. Flavours of lemon, green apple and orchard fruits are supported by fresh acidity and the characteristic chalky minerality that defines great Chablis. The wine remains elegant and pure throughout.
Finish
Long, clean and mineral-driven, with lingering citrus freshness and a precise saline edge.

This is one of those wines that perfectly demonstrates why Chablis remains one of the world's benchmark white wines. There is no excessive oak, no unnecessary winemaking tricks—just pure Chardonnay expressing its terroir. What I particularly appreciate about Pascal Boban is the balance between freshness and texture. The wine has the classic mineral tension that Chablis lovers seek, yet remains approachable and incredibly versatile at the table. If you're looking for a white wine that feels both elegant and effortless, this is a bottle I would happily recommend time and time again. It is also one of my favourite pairings with oysters and seafood, where the saline notes in the wine truly come alive.
